I’m a lucky girl, some nights I refuse to cook and Mangy is more than willing to step in. I have to admit some of his creations have been a little strange (he thinks he’s related to Jamie Oliver), but his latest was an absolute masterpiece! You’ll need:
- 6 or 7 Brussels sprouts (remove any brown leaves, cut off the hard piece in the bottom and slice in half)
- 2 tablespoons butter
- 1 garlic clove (sliced finely)
- 2 tablespoons unsalted raw pistachios (chopped roughly)
- salt to taste
- freshly cracked black pepper
Method:
Heat butter until it starts to bubble, add brussels sprouts and garlic and keep stirring until the brussels sprouts are half cooked. Increase the heat slightly and add pistachios. Again, keep the veges moving, cook until the brussels sprouts are cooked through and a little brown on the edges. The garlic will be golden and crispy and the pistachios will be nicely toasted. Season with salt and pepper and serve hot. Enjoy!
