I’ve made this recipe so many times that I can’t believe I’ve never posted about it! It’s a really quick bread to throw together and the end result is an amazingly soft loaf or buns with a nice crusty exterior. This loaf makes for a very good sandwich.
You’ll need:
- 225ml water
- 2 tablespoons caster sugar
- 1 teaspoon instant yeast
- 4 tablespoons olive oil
- 400g bread flour (sometimes I mix 300g white and 100g wholemeal)
- 1 teaspoon salt
- 1 teaspoon bread improver
- 1 tablespoon milk powder
- melted butter (to grease loaf tin + to brush on top of loaf)
Method:
Add all ingredients except butter into your breadmaker’s tin. Follow manufacturer’s instructions to knead and proof dough.
Prepare baking tin by brushing melted butter into the inside of your loaf tin or tray and dust with flour.
Once the dough is ready, punch down, shape into a loaf or small buns, place into baking tin and cover loosely with a tea towel. Allow to rise for an hour.
If you would like a soft crust, brush melted butter on the outside of dough. Using a very sharp knife, score the outside of the loaf. If you’re making buns, you may choose to skip the scoring.
Bake for about 30 to 40 minutes in a pre-heated oven at 180 degrees. Once cooked, remove from tin and allow to cool on a rack. For extra buttery-ness (and why not?), brush baked loaf or buns with more melted butter. Once completely cool, slice and enjoy!
