I spent the entire day clearing out the fridge as we’re going away for the weekend (yay!)
I found some mint and baby cucumbers and thought I’d combine them in a dish. I borrowed the idea from a pickle recipe so I’m really not sure if I should really be calling this a salad? I suppose it’s a quick pickle. Either way, the end result was really fresh and tasty. Perfect for this humid weather. I served the salad with some fried rice and the combination went down a treat.
You’ll need:
- 6 baby cucumbers or 1 medium sized cucumber (scoop out seeds and cut into quarters and slice roughly)
- 1 sprig mint (remove stem and chop leaves roughly)
- 3 green chilies (slice finely)
- 1/2 teaspoon sugar
- 1 teaspoon soy sauce
- 2 teaspoons mirin
Method:
Mix all ingredients, place in the fridge to chill for about 20 minutes. Serve cold. Enjoy!
