Orange Chocolate Chip Pancakes

Since I was five, my brother and I would prepare breakfast in bed for my mum (breakfast used to be watery lukewarm coffee and soggy toast!).

Even after getting married, Mangy and I would head back home early on Sunday morning, drag my brother out of bed and cook breakfast for her. We would ‘sneak up’ on her with breakfast. My mum knows the drill so well now that she gets up super early to wash up, brush her teeth and get back into bed, ready for her breakfast.

This year would be the first time that both my brother and I are away on Mother’s Day. I miss her terribly, but I’ll be seeing her next week – so we’ll have a belated Mother’s Day breakie 🙂

I’m dedicating these pancakes to my mum (although mum isn’t a pancake lover)! They were lovely and light. They’re also super easy to prepare and I was thinking about her while making them. Happy Mother’s Day Amma! I miss you lots and can’t wait to hug you.

You’ll need:

  • 1 cup self raising flour
  • 1 cup milk
  • 1 egg
  • 1/2 teaspoon baking powder (for extra lift)
  • 1/2 tablespoon cocoa powder
  • 1/2 tablespoon orange zest
  • 1/2 tablespoon honey
  • 1 tablespoon melted butter
  • pinch of salt
  • 1/4 cup mini choc chips
  • extra butter for frying pancakes


Mix all ingredients except choc chips and butter for frying. Heat a pan to medium heat. Melt a knob of butter. Pour one ladle of batter into the pan, once bubbles start to appear, sprinkle choc chips over the pancake. Flip and cook the other side. Once cooked, serve with butter and maple syrup. Enjoy!
