Yes I’ve disappeared for a few months (did you miss me?) – well, a lot of things have happened. But I won’t go into that just now. I’ll post my life story later.
Here’s a super super quick recipe to whip up when you’re feeling a little peckish. I make this pretty often and realised that I’ve never blogged about it!
You’ll need:
- 1/2 cup frozen corn kernels (boil and drain well)
- 1/2 teaspoon good butter
- Pinch of red chilli powder
- Squeeze of lime
Method:
Heat corn kernels in a sauce pan until any liquid has evaporated. You want it quite dry so that the seasoning will stick to the kernels Add butter, chilli powder and stir well. Remove from heat, squeeze lime and stir through. Enjoy!
