Moong Dal or Mung Beans are highly nutritious, low in salt and fat and are full of fiber. So these dosas are a great way to start your day, serve with some idli podi and pickles and you’ve got a winning meal in under 10 minutes.
You’ll need to soak overnight:
- 1/2 cup whole mung beans
- 1/2 cup rice (I used basmati rice)
- Enough water to cover beans and rice
Next morning: you’ll need to grind into a very smooth paste:
- Beans, rice and the soaking water
- 1 green chilli
- 1 inch piece ginger
- 2 cloves garlic
- 1/2 cup fresh coriander
- 1 teaspoon cumin seeds
- pinch of hing
Prepare dosa pan as you would for regular dosas.
For really crisp dosas, reduce flame and allow to cook slowly until dosas brown and crisp up. Flip and repeat on other side. Enjoy!
