This is my favourite method to prepare bittergourd. It is a little time consuming, but give it a try. You won’t regret it!
- 1 large bittergourd
- 2 tablespoons salt
- 2 tablespoons besan flour
- 1 tablespoon rice flour
- 1 teaspoon corn flour
- 1 teaspoon white sesame seeds
- Chilli powder to taste
- ½ teaspoon turmeric powder
- ¼ teaspoon garam masala
- ¼ teaspoon dry mango powder
- Salt to taste
- Oil for frying
Slice bittergourd into thin rounds. Remove any large seeds. Mix bittergourd with 2 tablespoons of salt and set aside for half an hour. After half an hour, rinse the salt off the bitergourd and place the slices into a cheesecloth or other similar material. Squeeze away as much liquid as you can.
In a large bowl, mix all the flours, sesame seeds, chilli powder, turmeric powder, garam masala, dry mango powder and salt. Toss the bittergourd slices in the flour mixture, ensuring the slices are well separated.
Heat oil for frying, drop the slices in one by one and fry until crisp.
For added crisp, lay the fried slices in a single layer on a baking tray and bake in a pre-heated oven at 170 degrees for about 5 minutes. This will dry out the chips and make them extra crispy and you can store them for a longer period of time. Enjoy!
