Rosemary and Lemon Salt

A friend at work has a whole hedge of rosemary and every time she prunes her hedge, she brings bags and bags of rosemary into work to share. So here’s a rosemary salt recipe. This salt mix tastes fantastic over hot chips or roast lamb.

You’ll need (mix together):

  • 500g rock salt
  • zest of one lemon
  • 25g fresh rosemary leaves
  • 2 teaspoons whole black pepper
  • 1/2 teaspoon fennel seeds
  • 3/4 teaspoon garlic powder


Heat a heavy bottom pan until very hot. Turn the heat right down and roast the salt mix for about 10 minutes. Allow mixture to cool completely and then blitz in a food processor until powdered. Enjoy!
