Satay Fried Prawns

When you’re short on time (and inclination), one the quickest ways to cook a tasty dish is to make sure the main ingredient is cut up really small. Small = less cooking time. Small also means more surface area, so the flavourings you choose to use will have more areas to coat. In this recipe, I’ve used one of my favourite ingredients – Satay powder. There are 100s of brands out there, I prefer Ayam brand Satay Seasoning. Sprinkle a pinch over fried eggs, marinade and grill fish, sprinkle over BBQed corn, you’ll fall in love with it!

You’ll need:

  • 500 peeled prawns (cut into half inch pieces – I just used a scissors to snip into smaller pieces)
  • 1 tablespoon Ayam brand Satay Seasoning
  • 1 tablespoon Gourmet Garden Thai Seasoning Paste
  • 1/2 tablespoon Kikkoman Hot and Spicy Soy marinade
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon roasted red chilli powder
  • 1 teaspoon coriander powder
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Pinch of salt
  • 1/2 red chilli – sliced finely (optional)
  • 1/4 cup fresh coriander (chopped roughly)
  • Oil

Marinade prawns in all the ingredients (except sliced red chilli, coriander and oil). Set aside to marinade for as long as you can, 5 minutes is great 30 minutes is even better.

In a flat pan, heat oil until almost smoking hot. Spread out the prawns to form a single layer. Press down gently. Cook until the underside browns and starts to crust  a little. Turn prawns over, repeat process. Keep stirring and cooking until all the prawns are cooked and nicely browned. Stir through cut chilli and coriander. Serve with hot rice. Enjoy!
