If you’re diabetic or on a low carb diet, the hardest thing to give up is rice or roti. I have yet to find a good replacement for rice, but this roti recipe isn’t too bad.
You’ll need:
1 cup LC Cake Flour
20g Tahini Paste (for that nutty Atta taste)
1/2 cup water (more or less as needed)
15g Coconut flour (more or less as needed)
1 teaspoon oil
Method:
Mix cake flour with tahini paste. Add water little by little and knead together until it forms very sticky dough. Add a little oil and keep kneading until smooth. Split into equal sized balls. I get about 7 rotis from this mix.
Flatten a ball of dough on a mat or rolling board. Sprinkle coconut flour on both sides of the flattened dough. Roll out into thin rotis. Cook on a dry hot pan for about 30 seconds on each side. Keep warm until ready to serve. Enjoy!
I make it with atta, oats & bran. Didn’t even know there is a LC cake flour!!!!! Anu
