Fried Okra

Mangy’s mum made this for us when we were in India last year. I couldn’t believe how tasty okra could be until I tried this! It’s also super quick and great for a mid-week dish.

You’ll need:
200g fresh okra (as tender as you can find them)
1 tablespoon chilli powder
Salt to taste
Oil for shallow frying

Remove the tops of the okra and slice the okra down lengthways. Mix okra with salt and chilli powder. Heat a pan until hot. Add oil, you only need enough oil to coat the bottom of the pan. Place okra cut side down and using a spatula, press down hard. Repeat on all the okra pieces until they’re brown and crisp on one side. Flip okra pieces over, repeat process. The okra will turn into spicy chips. Enjoy!
