Egg white Mayonnaise

If you made my Garlic Mayo recipe, you’re probably wondering what to do with the egg whites. This is more of a traditional mayo and is really easy to whip up. It’s thick and glossy and would be lovely as a sandwich filling mixed with some chopped roast chicken and avocados. 
  • 2 egg whites
  • 1/2 cup rice bran oil
  • 1/2 cup olive oil (or more as needed)
  • Salt to taste
  • 1/2 teaspoon horseradish
  • 1/2 teaspoon sweetener or sugar (or more as desired)
  • Black pepper to taste
In a blender, blend everything except olive oil. The mixture will turn very white and look curdled. Pour this mix into a bowl and whisk together. Add olive oil tablespoon by tablespoon until mixture thickens to desired consistency. Enjoy!
