Orange Almond Chocolate Chip Cake

I’ve written before about Mangy’s obsession for home-baked cakes. He strongly feels it is part of a wife’s duty to bake a cake every weekend. Sometimes I wonder if he regrets not putting it into a pre-nuptial contract. A cake a week otherwise out she goes!

This weekend, I finally broke down and got tired of his constant whinging and baked this cake for him. I’ve made a few changes and added extra ingredients I already had at home. The method is also different. I didn’t bother with the ‘cream butter with sugar first’ business. Everything got dumped into the bowl together and I used an electric beater and whipped it all into shape. The result was a very nice buttery cake, not overly sweet, studded with dark chocolate. A proper grown up’s sweet treat.

You’ll need:

  • 3 eggs
  • 3 tablespoons milk
  • 1 vanilla pod – scrape out the seeds, discard the peel
  • 150 grams plain flour + 1 teaspoon baking powder (sift together)
  • 1/4 teaspoon salt
  • 150 grams caster sugar
  • 185 grams unsalted butter – room temperature, cut roughly into cubes
  • 50 grams dark chocolate bits (I use Cadbury)
  • 50 grams almond meal
  • Zest of 1 orange
  • Juice of 3/4 orange (or more if you wish)

Preheat the oven at 180 degree Celsius. Line a loaf tin with baking paper. In a large bowl, use an electric whisk or mixer and mix together everything except choc bits and almond meal. Keep mixing until it’s light and fluffy. Fold through the choc bits and almond meal. Pour batter into loaf thin. Bake for about 50 minutes until cooked through. Remove from oven, let cool (if you’re patient) – Enjoy!
