My grandma’s fish recipe is different from my mum’s recipe. Granny believes in keeping it really simple, with top quality fish. She fries the fish slowly on medium heat. This gives the fish a nice even colour and ensures that the marinade sticks well and you don’t lose all that flavour in the oil.
You’ll need:
- 4 medium sized fillet pieces of Coral Perch Fish (or similar type of fish)
- 2 teaspoons roasted red chili powder
- 2 teaspoons red chili powder
- 3 teaspoons fish masala powder (I use Baba’s brand)
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1/4 teaspoon turmeric
- Salt to taste
- Oil
Method:
Slice fish up into 2 inch pieces. Coat well in turmeric and rinse off. Dry fish well.
In a bowl, mix all the other ingredients (except oil) and marinade fish. Heat oil on medium heat and fry fish on both sides. Drain oil well on kitchen paper. Enjoy!
