Mini Potato Bake

This is such a pretty dish to look at, serve it with roast or steak and you’ve got a winning meal. You can prepare the potato bake the night before and put it in the oven when your guests arrive.
You’ll need:
2 large red-skinned potatoes (peeled and sliced thinly)
Water (to boil potatoes)
1 tin Carnation milk
1/4 onion (peeled)
2 garlic cloves (cut into half, leave peel on)
1/2 teaspoon whole black peppercorns
2 dried bay leaves
3 sprigs rosemary (leave 1 sprig whole, cut the other 2 sprigs into inch pieces)
3 tablespoons butter
3 tablespoons flour
2 tablespoons grated parmesan
Grated tasty or cheddar cheese (for the topping)
Salt to taste
Heat water, add potatoes. Bring to a boil, and cook for about 5 minutes. Drain and set aside.
Grease a muffin tray liberally with butter. Cut a piece of baking paper into strips and lay it down in the holes of the tray. The overhang of the strip will act as handles to pull out the baked potato. Distribute the potato slices into the tray. Overlap the slices, it’s fine to break the potato pieces to fit the holes.
In a pot, add milk, rosemary, bay leaves, peppercorns, garlic, onion and salt. Bring to a oil, simmer for about 5 minutes. Remove from heat. Let the flavors infuse. Then pour the mixture through a sieve.
Heat butter in a pan, add flour. Stir vigorously to prevent the flour from burning. Once the butter and flour starts to thicken, add half the infused milk. Stir well to avoid lumps. Add the rest of the infused milk and parmesan cheese. Stir well again and ladle out this sauce evenly over the potatoes. Fill till the brim of the tray. Allow the potatoes to sit for a few minutes, the sauce will settle down. Sprinkle the grated tasty cheese on top of the sauce, stick a rosemary piece into each potato bake.
*At this stage, you can allow the sauce and potato to cool and leave it in the fridge overnight, the next day bring it back to room temperature and bake.
To bake, heat the oven to 200 degrees. Bake the potatoes for about 20 minutes. Then grill for about 5 minutes until a golden crust forms on top. Enjoy.
