Smashed Garlic Kipfler Potatoes

This potato dish goes wonderfully with a roast dinner or BBQ meal. It is also really easy to prepare. If you’ve never tried Kipfler potatoes, pick some up the next time you’re at the markets. You’ll be hooked. They’re so different from normal potatoes, with so much flavor and the texture is incredible.

You’ll need:
  • 300 grams Kipfler potatoes (peeled and cut into 3/4 inch pieces)
  • Water (for boiling potatoes)
  • Salt to taste
  • 1 tablespoons butter
  • 2 tablespoons olive oil
  • 1 garlic clove (peeled and crushed)
  • 2 teaspoons dried mix herbs
  • Ground black pepper to taste
 
Method:
Boil the potatoes in water and a pinch of salt until 3/4 cooked. Remove from hot water, lay out in a tray. Using the back of a fork, press down on each piece of potato until smashed (not mashed). 
 
Preheat oven at 220 degrees. Mix the potatoes with olive oil, garlic, salt, pepper and dried herbs. Lay out in a single layer on the pan. Dot the top of the potatoes with butter. Place in oven until crisp. Remove from oven, turn pototed over, being careful to coat all sides of potatoes with any oil in the pan. Bake again until crisp on other side. Remove from oven, serve in bowl. Break up any pieces that are stuck together before serving. Enjoy!
