Dad-in-law’s Dry Spicy Chicken


I’ve never actually tasted my father-in-law’s cooking, but Mangy and his brother often talk about their father’s chicken recipes. It seems he loves to experiment in the kitchen and his Dry Chicken recipe is one of his successful recipes.

Mangy makes it often at home, especially when he’s tight on time but is craving for something home-cooked. It only takes about 10 minutes to prepare. However if you have more time and are organised, marinate the chicken overnight for better results.
You’ll need:
  • 2 chicken breasts (cubed)
  • 1/2 cup yogurt
    1 tablespoon garlic paste
  • 1 tablespoon ginger paste
    1 tablespoon red chilli powder (or to taste)
    1/2 tablespoon Coriander powder
    1/2 teaspoon turmeric powder
  • Salt to taste
  • Oil
Mix all the ingredients except oil and salt. Marinate overnight in the fridge if possible. If you’re short on time, you can cook right away.
Just before cooking, add salt to chicken and stir well. Make sure chicken is at room temperature before cooking.
Heat a pan, add about 1 tablespoon of oil. Add chicken with all the marinade. Stir well. Keep stirring, if chicken sticks, add a little more oil. Stir and fry chicken until cooked through and dry. Serve with finely sliced red onions. Enjoy!
