Super Quick Okra / Ladyfingers Perattal

Great recipe for a weekday night. Stock up your freezer with frozen cut okra and you’ll always be ready to whip this up for dinner with rice or roti.
You’ll need:
  • 1 packet frozen okra (about 350 grams) – cut into small pieces
  • 1/2 onion – chopped
  • 1 teaspoons besan flour
  • 2 teaspoon roasted red chilli powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon mustard seeds
  • 1/4 teaspoon cumin seeds
  • 1 sprig curry leaves (remove stalk)
  • Pinch of hing
  • Pinch of sugar
  • Salt to taste
  • Oil


Heat a wide pan until almost smoking hot, add frozen okra and keep stirring until it defrosts. If you thaw frozen okra in the microwave it goes gooey. Thawing it over very high heat seems to prevent this.

Once okra is thawed (but not cooked), push aside in the pan. Heat oil, add everything except besan. Fry for a little bit until onion goes translucent. Add besan, stir well. Add a little more oil if besan sticks to the pan. Keep frying until okra is cooked but still crisp. Onions will be cooked, but slightly crunchy. Serve with roti. Enjoy.
