Hamburger Buns

You may have read in earlier posts, I have been trying to cut down my meat intake, and so far it’s been going pretty well. One of the things that has really helped is Quorn. Quorn is a range of meat-free, soy-free products that are made out of fungi and actually taste pretty good.

We had Quorn burgers for dinner tonight, with home-made hamburger buns. I used this recipe, but tweaked it slightly as usual. The buns turned out fab, I’ve hidden a few in the freezer as well.

For the dough: You’ll need:
1 cup milk
1 cup water
1 teaspoon salt
1 egg yolk
2 tablespoons melted butter
5 1/2 cups plain flour
2 1/4 teaspoon yeast
1 tablespoon white sugar
For the topping: You’ll need:
1 egg yolk
1 tablespoon water
White sesame seeds (optional)
Using the dough setting of your breadmaker, add all the ingredients for the dough in the order listed above. Always add liquids first with the salt. Add sugar last with the yeast. The sugar feeds the yeast, and the salt can kill the yeast. So keep them separate for as long as possible.
Once the breadmaker is done, remove the dough and punch it down. Divide equally into golf-sized balls. If you join your index finger-tip and your thumb tip and form a circle, and you push each ball of dough through that circle, the skin of the dough should stretch over the ball. Pinch it altogether at the bottom of the dough. This will form a smooth skin over each bun.
Lay  out the buns on a tray, it’s okay if they touch each other. Let the dough relax for a couple of minutes, and then press down on each ball until they form circles of 3 to 4 inches wide.
Pre-heat the oven at 180 degrees. Cover the balls with a cloth and let rise for another 20 minutes. Remove the cloth, beat the egg and water and brush the balls of dough with this mix. Sprinkle sesame seeds on top.
Place the tray on a low rack in the oven, bake for 10 minutes, turn the tray around, bake for another 10 minutes. Remove the tray once the buns are golden brown. The buns will be stuck on the sides to each other, let them cool slightly before you tear them apart. Enjoy!
