Mangy’s Dal Vada

You’ll need:
1 cup of dal (made up of 1/2 cup of channa dal + a mix of masoor dal, toor dal, moong dal and urad dal)
2 green chillies (or more)
1/2 teaspoon cumin
1 inch piece ginger
1/2 bunch fresh coriander
1 red onion – diced finely
1 sprig curry leaves – remove stem, cut leaves finely
1 teaspoon roasted red chilli powder
1 teaspoon coriander powder
1/2 teaspoon turmeric
Pinch of hing
Salt to taste
Oil (for frying)

Soak dal overnight. The next morning, blend dal with ginger, green chilies, cumin seeds and fresh coriander into a coarse mixture. Add curry leaves, onion, roasted red chilli powder, coriander powder, turmeric, hing and salt.  Mix well. Shape into small balls and fry in hot oil. Drain on paper towels. Enjoy!
