Puri / Poori

I love love love puri. Who could resist warm, greasy chewy-crispy bread? Dunked in a good curry, I mean really…if I had to choose between a good looking man, and a lovely golden puffed puri, you know which one I’d pick every time (but only coz I’m a married woman)!

If you’re looking for good Atta, I would suggest you try ARTA, available in Coles. Rotis made out of ARTA taste so much better. It’s also a really easy flour to work with. I hardly knead it and still dish out good soft bread.

I only found it by chance. I was at mum’s place and she’d run out of Atta, and I couldn’t be bothered going to the Indian store. The guy who runs the Indian store knows my parents, so he feels it’s his right to know all the family goss! While I don’t usually mind a good bitching session, on this particular day, I just wasn’t up to it. So well, I landed up with ARTA from Coles! I couldn’t be happier!

To make 8 puris:

1 1/2 cups of Atta
Water (enough to make a dough)

In a bowl, pouring a little of the water at a time, knead the atta into a dough. Pour a little oil over the dough, and knead again until you form a smooth ball. Cover in cling film and let rest for about 20 minutes.

Divide the dough into small golf-sized bowls. Heat oil in a large frying pan or wok. Sprinkle some flour on to your work surface or rolling board, flatten the ball of dough down to form a flat circle and then roll out gently. Don’t worry about rolling it out very thinly. Just make sure the dough is even rolled out on all sides.

Slip the dough into the hot oil. Using a ladle, scoop and pour hot oil over the top of the puri, and it should puff up. Gently turn over and cook the other side.

Once golden brown, remove from oil, drain on kitchen paper and serve with your favourite curry. Enjoy!
